Not All Pizza Is Created Equal
15. St. Louis Style PizzaCracker-thin crust, Provel cheese, cut into squares. St. Louis does pizza its own way and it makes purists furious.
14. Sfincione (Sicilian)Palermo's thick spongy street pizza topped with anchovy, onion, and breadcrumbs. Sicily always plays by its own rules.
13. Greek-American Style PizzaNew England's thick, pan-oiled Greek-American pizza is chewier than NY, more honest than Chicago, and criminally underrated.
12. New Haven ApizzaCoal-fired, charred, chewy — locals don't even call it pizza. Frank Pepe's white clam pie has drawn pilgrimages since 1925.
11. OkonomiyakiJapan's savoury pancake pizza: Okonomi sauce, Kewpie mayo, bonito flakes. It's technically pizza — ask any Osakan.
10. Roman Pizza Al TaglioRome invented selling pizza by weight. Point at a slab, they cut it, you pay by the gram. Thick, airy focaccia-like crust.
9. California Style Pizza1980s California threw out the rulebook. Smoked salmon, avocado, goat cheese on thin crust. The whole world ended up copying it.
8. Flammkuchen (Tarte Flambée)Crème fraîche, caramelised onions, lardons, razor-thin crust. Both France and Germany claim it — which tells you everything.
7. Argentine FugazzetaTwo layers of dough stuffed with mozzarella, topped with caramelised onions. No tomato. No apologies. Buenos Aires since 1934.
6. LahmacunA paper-thin flatbread of spiced minced lamb, rolled up street-side. Turkey's answer to pizza predates Naples by thousands of years.
5. Detroit Style PizzaBorn in 1940s Detroit auto shops — brick cheese melts to the edge, the sauce goes on top. Every corner piece is pure caramelised crust.
4. New York Style PizzaFold it in half, eat it walking. New York's giant thin slices, high-gluten crust, and 1,600 shops all claiming to be the best.
3. Chicago Deep DishCheese on the bottom. Sauce on top. It is technically a pie. One bite and you stop arguing — and start ordering another.
2. Pizza MargheritaNamed for Queen Margherita in 1889 — tomato, mozzarella, basil. Three colours of the Italian flag. The recipe is EU-protected.
1. Neapolitan PizzaThree ingredients. 90 seconds at 485°C. UNESCO-protected since 2017. Nothing invented since comes close to the original Napoletana.
